The Fresh, Color-Packed Salad That Never Gets Old

It’s bright, crisp, and satisfying in a way that feels effortless, combining fresh vegetables with creamy cheese and a simple homemade dressing. Every bite delivers contrast—cool and crunchy, juicy and soft—making it perfect for days when you want something light but still deeply enjoyable. Ingredients (Serves 2–4):

4 cups mixed fresh greens (arugula, spinach, or romaine)
1 large cucumber, sliced
1½ cups cherry tomatoes, halved
½ cup crumbled feta cheese
¼ cup sliced red onion (optional)
¼ cup nuts or seeds (walnuts, almonds, or sunflower seeds)
Dressing:

3 tablespoons extra-virgin olive oil
1½ tablespoons fresh lemon juice or red wine vinegar
1 teaspoon honey or maple syrup
Salt and black pepper, to taste
To prepare, start by washing and thoroughly drying all vegetables. Add the greens, cucumber, tomatoes, and onion to a large bowl and toss gently. Sprinkle the feta and nuts over the top. In a small bowl or jar, whisk together the olive oil, lemon juice, honey, salt, and pepper until smooth. Drizzle the dressing over the salad just before serving and toss lightly to coat everything evenly.

This salad is easy to customize depending on the meal or season. For extra protein, add grilled chicken, chickpeas, or lentils. If you want more texture, toss in dried cranberries or apple slices. Goat cheese or mozzarella can replace feta, and avocado makes a great addition for creaminess. Serve it immediately for the best flavor and crunch, or prep the ingredients ahead and keep the dressing separate until ready to eat.
